Chef and restaurateur Omar Montero takes over The Burrow for a night where Mexican taquería culture meets the intimacy of a cocktail salon.
Born and raised in Mexico City, Montero brings together deep Mexican roots, fine-dining discipline and a distinctly modern perspective. His career has taken him through luxury hospitality in Mexico and the United States, including working alongside acclaimed chef Luis Pous and at The Setai Miami Beach. In 2017, he founded La Santa Taqueria, bringing his own expression of Mexican cooking to Miami.
For one night at The Burrow, that story comes together through a limited menu of signature tacos, Mexican-inspired cocktails and an all-vinyl soundtrack moving from Latin soul and Mexican funk to cumbia, Latin jazz and modern Mexican sounds.
