Max Kamakura presents Vinyl Omakase
We’re delighted to welcome back Chef Max Kamakura as the newest resident chef at The Burrow, where he will host a monthly Chef Takeover exploring the artistry, culture, and storytelling behind his cuisine.
Coming from a renowned lineage of sushi chefs in Brazil, Chef Max Kamakura has spent more than two decades refining a culinary voice shaped by Japanese tradition, Brazilian culture, and global exploration. After beginning his journey in his family’s sushi restaurant at just fifteen years old, a life-changing accident led him to immerse himself in Indigenous communities in Northern Brazil, where he studied native ingredients, ancestral techniques, and a profound connection between nature and food—experiences that continue to define his cooking today.
Chef Kamakura now presents Vinyl Omakase — an intimate multi-course experience where music and cuisine evolve together in real time. Rooted in the precision and philosophy of traditional omakase while infused with influences from Brazil, Peru, and beyond, each course is paired with carefully curated vinyl selections that shape the rhythm and atmosphere of the evening.
Inspired by Japanese listening bars and private salon gatherings, this is not simply dinner, but a shared sensory experience where sound, flavor, and storytelling become inseparable.
