Coming from a renowned lineage of sushi chefs in Brazil, Chef Max Kamakura has spent more than two decades refining a culinary voice shaped by Japanese tradition, Brazilian culture, and global exploration. After beginning his journey in his family’s sushi restaurant at just 15 years old, a life-changing accident led him down a new path — immersing himself in Indigenous communities in Northern Brazil, studying native ingredients, fishing techniques, and ancestral methods that would forever transform his approach to cuisine.
In collaboration with The Burrow, Chef Kamakura now presents a one-night-only Vinyl Omakase — an intimate multi-course experience where music and cuisine evolve together in real time. Rooted in the precision and philosophy of traditional omakase while infused with influences from Brazil, Peru, and beyond, each course is paired with carefully curated vinyl selections that shape the rhythm and atmosphere of the evening.
Inspired by Japanese listening bars and private salon gatherings, this is not simply dinner, but a shared sensory experience where sound, flavor, and storytelling become inseparable.
